Step 1
Preheat oven to 190°C/gas mark 5.
Step 2
Scoop out some of the flesh of the nectarines and chop into small pieces.
Step 3
Mix together Pure spread, sugar, 25g nectarine with the Pure mixture and put a tablespoon of the filling into the centre of each nectarine.
Step 4
Arrange the nectarines in an ovenproof dish and cover with tinfoil.
Step 5
Bake for 20 minutes.
Step 6
Remove tinfoil and bake for another 10 minutes or until they are tender. Scatter over the remaining ginger biscuits before serving.
Step 7
Dairy-free ice cream makes an ideal accompaniment.

Tips: For summer dining, just place in foil and cook on the BBQ. Make this recipe more indulgent by replacing the almond essence with Amaretti Liqueur.
